Hampton Creek's Healthy Just Mayo Recipes For Super Bowl Sunday and Beyond

It's Super Bowl Sunday, a date full of fattening game day foods! Here at ChiIL Mama we love a good excuse to indulge in diet derailing snacks, but we're also all about clean eating as often as possible, especially when we find something that still tastes great. That's why we were excited when Hampton Creek reached out to us about doing a feature on their Just Mayo and sharing 3 rockin' recipes with our readers. Naturally Delicious Elf & Reindeer Sausage Shapes With NEW Johnsonville Naturals

Here at ChiIL Mama, I try to feed my family natural foods free of fillers, MSG, preservatives, and unhealthy fats as often as possible. When we were asked to create an original recipe, we made 3 variations on a fun holiday breakfast theme featuring Johnsonville Naturals' NEW 100% natural Original Breakfast Sausages. Customize these fun treats for the whole family. There's sure to be a variation everyone will love, and you can feel great about serving Johnsonville's natural choice. Try ours to start or invent your own!


Ingredients:
Johnsonville Naturals' Breakfast Sausages
eggs
sharp cheddar cheese (alter to taste)
a sheet of canned dough or crescent rolls
pomegranate arils
pumpkin kernels  



Directions:
Sausage Scramble
Cook sausages and scramble eggs. Slice sausages and add to eggs. Add pumpkin kernels for a salty kick and a bit of seasonal green!



Elf Sausages
Cook sausages. Cut sheet of dough into 6 triangles for elves or cut sheet of dough in half and use one side for the Sausage Antler Reindeer Filled With Cheesy Scrambled Eggs. Cut off a small triangle for a hat, wrap sausages in remaining dough, press hat on head and twist and loop the ends down. Cook according to dough package directions (approx 15 minutes at 375). Garnish with pomegranate arils and pumpkin kernels for a salty sweet, seasonal flavor in holiday colors!






Sausage Antler Reindeer Filled With Cheesy Scrambled Eggs
Cook sausages. Cut sheet of dough in half and make two Sausage Antler Reindeer Filled With Cheesy Scrambled Eggs. Fill dough, cook according to dough package directions (approx 15 minutes at 375). Garnish with pumpkin kernels for a salty seasonal flavor in holiday colors! Enjoy!

I'm going to suggest them to my favorite young chefs. Then I'm crossing my fingers for a breakfast in bed for this Fourth of July weekend with a coffee cake or muffin version. I'd also be thrilled with a cake version to go with the evening's fireworks!

March is a great month to get heart healthy.  Our family exercises and eats well, to protect our hearts. As a competitive gymnast, my 10 year old daughter does conditioning and team workouts 12 hours a week.  





Both of my kids enjoy circus arts like silks, trapeze, Chinese Pole, Spanish Web, lyra, unicycles, and acro.  My son who just turned 13 also plays on an Ultimate Frisbee team.  My husband and I have a treadmill desk and a Bowflex at home and we enjoy hiking, biking and dancing.

Tasty Oven French Toast With Lactaid & Melissa d'Arabian on The TODAY Show #recipe #foodiefun #AD

Moooove over milk... Lactaid is in the house.  If someone in your family gets dairy discomfort, quit your belly achin' and try it.   Lactaid tastes like real milk because it IS real milk, with an added enzyme for easy digestion.   



Half of my family is sensitive to dairy, so we were elated when Lactaid wanted to partner up with us on a series of sponsored posts.   We were also stoked to find Costco stocks big jugs of Lactaid, because it's tasty stuff and we've been guzzling it!  I'd just bought a jug a few days ago and went to make a recipe for this post and found the kids drank it all already.   I had to run out and restock.

My daughter and husband have the most trouble with breakfast, since lactose intolerance is worse on an empty stomach, so we checked out the cool recipes from Lactaid and whipped up some Oven French Toast.   Lactaid can be used in place of milk in any of your tried and true favs, too.





The French Toast was tasty, moist, and easy.  The whole family dug it, and nobody got stomach cramps!   Here's the recipe.   Click here for many more from Lactaid.   


Baked French Toast with Orange Syrup
Submitted by: Makers of LACTAID® Brand Products
Once you try this oven-baked French toast, you’ll never make it the old way again. On a griddle or in a skillet, French toast must be made in batches. Baking allows you to cook all eight pieces at once.
  • Serves: 4
  • Prep Time: 10 Minutes
  • Cook Time: 11 Minutes
  • Total Time: 32 Minutes


Ingredients
  • Nonstick cooking spray
  • 2 eggs, slightly beaten
  • 1 cup LACTAID® Reduced Fat Milk
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon ground cinnamon
  • 8 (1/2-inch-thick) slices French bread
  • 1/4 teaspoon finely shredded orange peel
  • 1/2 cup orange juice
  • 1 tablespoon honey
  • 1 teaspoon cornstarch
  • 1/8 teaspoon ground cinnamon
  • Sifted powdered sugar (optional)


Preparation
  1. Heat oven to 450 degrees F.
  2. Coat a large baking sheet with cooking spray. In a pie plate combine eggs, LACTAID® Reduced Fat Milk, vanilla, and 1/8 teaspoon ground cinnamon. Soak bread slices in egg mixture for about 1 minute per side. Place on prepared baking sheet.
  3. Bake in a 450 degree F oven about 6 minutes or until bread is lightly browned. Turn bread over and bake 5 to 8 minutes more or until slightly puffed.
  4. For orange syrup, stir together orange peel, orange juice, honey, cornstarch, and 1/8 teaspoon cinnamon. Cook and stir until thickened and bubbly. Cook and stir 2 minutes more. Remove from heat.
  5. Sift powdered sugar over toast, if desired. Serve with warm orange syrup.
